Banana Oat Collagen Bites
Soft banana-oat cookies with almond butter and chocolate chips. Make them as little bites or bake the same dough in one pan.
Makes
36 small cookies
Oven
350°F
Bake
10–12 minutes
Ingredients
1½ cups mashed very ripe banana (about 3 medium bananas)
2 eggs
¾ cup almond butter
2 teaspoons vanilla extract
2 tablespoons granulated 1:1 monk fruit sweetener (optional)
2 cups quick oats
1 cup oat flour
9 level scoops Collagen Tri-Glow (approximately 100 g powder)
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
⅔ cup dark chocolate chips
We like to blend our oats into a fine flour instead of buying a bag of oat flour.
Let’s bake
Heat the oven to 350°F.
Mix or blend the mashed banana, eggs, almond butter, vanilla and monk fruit sweetener, if using.
In a separate bowl, combine the quick oats, oat flour, collagen, baking powder, cinnamon and salt.
Stir the dry mixture into the wet mixture, then fold in the chocolate chips. Let the dough rest for 10 minutes.
Divide into 36 equal portions, arrange on baking trays and flatten slightly.
Bake on the middle rack for 10–12 minutes, until set. Let the cookies cool before enjoying; they firm up as they cool.
Keep this recipe even more balanced by using stevia-sweetened dark chocolate chips.
Contains egg and almonds. Check your chocolate chips for milk and soy.

Super Seed Collagen Muffins
Banana muffins made with oats, flax, chia and hemp seeds, with a little honey and dark chocolate.
Makes
12 regular muffins
Oven
350°F
Bake
18–22 minutes
Ingredients
2 ripe bananas, mashed
2 eggs
1 cup rolled oats
½ cup collagen powder
¼ cup ground flaxseed
2 tablespoons chia seeds
¼ cup hemp seeds
⅓ cup honey
¼ cup milk, plus more as needed
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup dark chocolate chips
Let’s bake
Heat the oven to 350°F. Line or lightly grease a 12-cup regular muffin pan.
Mash the bananas in a large bowl. Whisk in the eggs, honey, milk and vanilla.
Stir in the oats, collagen, flaxseed, chia seeds, hemp seeds, cinnamon, baking powder, baking soda and salt. Fold in the chocolate chips.
Let the batter rest for 5 minutes so the oats and seeds can absorb some moisture. It should be thick but easily scoopable; add a little more milk if needed.
Divide the batter evenly among the 12 muffin cups. Bake for 18–22 minutes, until the centers are set and a toothpick comes out mostly clean.
Cool in the pan for about 5 minutes, then transfer to a rack.
Contains egg and milk. Check your chocolate chips for soy and other allergens.
